method

Crispy Duck Pizza

  1. Fire up the pizza oven to get it good and hot.
  2. Place your pizza dough ball on a lightly floured work surface.
  3. Push the air out from the centre to the edge with your fingers, and stretch the dough to form a 12 or 16-inch pizza base, depending on the size of your ball.
  4. Spread a thin layer of the hoisin/tomato sauce mix evenly over the pizza base, leaving a small border around the edges.
  5. Evenly scatter some crispy duck and place slices of the Buffalo mozzarella over.
  6. Sprinkle some sesame seeds over for some crunch.
  7. Carefully transfer the pizza base to your peel. Remember to dust the peel with flour or semolina to prevent the dough from sticking.
  8. Bake in the pizza oven for around 2 minutes until the cheese is melted and bubbly, and you have a golden brown pizza crust.
  9. Scatter the baby cucumber, spring onion and red chilli slices across the cooked pizza, and finish with a drizzle of chilli oil.
  10. Take a bite and make all your dreams come true.
