eton mess pizza
this is a quick and simple, but very delicious way to use up pizza dough.
whip up some double cream, crush a few meringues and have a squeeze bottle of raspberry coulis* to hand.
open out your pizza base and dock with a fork or docking tool. cook your base, then leave to cool.
top with the raspberries, crushed meringue and drizzles and drizzles of raspberry coulis. then get stuck right in.
* you can make an easy raspberry coulis with 450g fresh raspberries, juice of 1/2 a lemon and 3 tablespoons of icing sugar. blitz everything together, then push through a sieve using a spatula. this will keep refrigerated in an airtight jar for a couple of days.
