The dough is made lovingly in Yorkshire by Great Balls of Flour.

A classic Neapolitan dough is slow fermented over 2 days at a controlled low temperature, resulting in a nutty, roasted flavour, a crisp but chewy base and a beautifully airy crust.

The sourdough is crafted with wild yeast, using a mother starter (affectionately known as 'Bubbles'). A slow 48 hour cold fermentation process results in a robust, sour and tangy flavour with nutty afternotes.

Gluten free dough balls are made using a recipe that mimics a classic wheat flour pizza dough, to make pizza with a deliciously crispy base.
